Was the Cupra Ateca ever sold with a manual gearbox?

Not with the 300 hp 2.0 TSI, which came only with the seven-speed DSG. A manual Ateca is a SEAT, with a smaller engine.

What should I check on the DSG of a used Cupra Ateca?

That the gearbox oil was changed on schedule, as the service book should show. On a test drive it should pull away and creep smoothly from cold, without jerks or slipping.

Is the Cupra Ateca's DSG suited to towing and mountain passes?

Yes: in manual mode the paddles hold a gear on long descents, so the engine helps to brake. Check the towing limits in the Fahrzeugausweis before hitching a trailer.
